This easy banana bread with streusel topping is irresistible from the first bite to the last crumb and it's about to become your new go-to. Ingredients

  • For the banana bread:
  • 2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 beaten eggs
  • 1 1/2 cups mashed bananas (appr. 5 medium sized bananas)
  • 1 cup sugar
  • 1/2 cup melted butter or margarine
  • 1 cup chopped walnuts
  • For the streusel topping:
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon cinnamon
  • 3 tablespoons flour
  • 2 tablespoons butter (use a pastry blender to blend the streusel ingredients)

Instructions

  1. Preheat oven to 350 F
  2. Grease a loaf pan and set aside.
  3. To make the streusel topping: In a small bowl, mix together the brown sugar, flour, and cinnamon. Use a pastry blender to cut in the butter until the mixture is crumbly. Set aside.
  4. To make the banana bread:
  5. In a large bowl (a bowl with a handle will make it easier to transfer into your loaf pan), combine flour, baking powder, baking soda, cinnamon, nutmeg, and a pinch of salt. Make a well in the centre and set aside.
  6. In a medium bowl combine eggs, bananas, sugar, and butter. Add egg mixture all at once to flour mixture. Stir just until moistened. Fold in the nuts.
  7. Pour into the prepared loaf pan. Spread the streusel topping evenly over the batter.
  8. Bake for 60 minutes or until a toothpick inserted in the centre comes out clean.
  9. Remove from the oven and set on a wire rack to cool for at least 10 minutes before slicing.
