Ingredients
- For the banana bread:
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 2 beaten eggs
- 1 1/2 cups mashed bananas (appr. 5 medium sized bananas)
- 1 cup sugar
- 1/2 cup melted butter or margarine
- 1 cup chopped walnuts
- For the streusel topping:
- 1/4 cup packed brown sugar
- 1/4 teaspoon cinnamon
- 3 tablespoons flour
- 2 tablespoons butter (use a pastry blender to blend the streusel ingredients)
Instructions
- Preheat oven to 350 F
- Grease a loaf pan and set aside.
- To make the streusel topping: In a small bowl, mix together the brown sugar, flour, and cinnamon. Use a pastry blender to cut in the butter until the mixture is crumbly. Set aside.
- To make the banana bread:
- In a large bowl (a bowl with a handle will make it easier to transfer into your loaf pan), combine flour, baking powder, baking soda, cinnamon, nutmeg, and a pinch of salt. Make a well in the centre and set aside.
- In a medium bowl combine eggs, bananas, sugar, and butter. Add egg mixture all at once to flour mixture. Stir just until moistened. Fold in the nuts.
- Pour into the prepared loaf pan. Spread the streusel topping evenly over the batter.
- Bake for 60 minutes or until a toothpick inserted in the centre comes out clean.
- Remove from the oven and set on a wire rack to cool for at least 10 minutes before slicing.
