A cozy, flavourful dish that comes together in just one pan in under an hour. Juicy chicken, smoky paprika, sweet tomatoes, and colourful peppers make it a dinner you’ll want on repeat. Just add some rice or crusty bread to catch all that delicious sauce!
Ingredients
- 2 skinless and boneless chicken breasts
- 2 teaspoons smoked paprika
- 1 tablespoon olive oil
- 1 small red onion, cut into 1/4 inch slices
- 1 red pepper, cut into 1/2 inch slices
- 1 small tub of cherry tomatoes, sliced in half
- 1 garlic clove, crushed
- salt and pepper to taste
Instructions
- Preheat oven to 450 F. Rinse chicken, pat dry, then rub with paprika, salt and pepper.
- Heat oil in an ovenproof skillet on medium and cook chicken until browned on 1 side (4-5 minutes).
- Flip chicken, add onion, pepper, tomatoes and garlic. Add salt and pepper to taste.
- Place skillet in oven to roast, stirring once halfway through. Roast until chicken is cooked through and vegetables are tender (15-20 minutes)
