A cozy, flavourful dish that comes together in just one pan in under an hour. Juicy chicken, smoky paprika, sweet tomatoes, and colourful peppers make it a dinner you’ll want on repeat. Just add some rice or crusty bread to catch all that delicious sauce!

Ingredients

  • 2 skinless and boneless chicken breasts
  • 2 teaspoons smoked paprika
  • 1 tablespoon olive oil
  • 1 small red onion, cut into 1/4 inch slices
  • 1 red pepper, cut into 1/2 inch slices
  • 1 small tub of cherry tomatoes, sliced in half
  • 1 garlic clove, crushed
  • salt and pepper to taste

Instructions

  1. Preheat oven to 450 F. Rinse chicken, pat dry, then rub with paprika, salt and pepper.
  2. Heat oil in an ovenproof skillet on medium and cook chicken until browned on 1 side (4-5 minutes).
  3. Flip chicken, add onion, pepper, tomatoes and garlic. Add salt and pepper to taste.
  4. Place skillet in oven to roast, stirring once halfway through. Roast until chicken is cooked through and vegetables are tender (15-20 minutes)
